Pizza Was My First Job

Shardell’s love affair with pizza began at 16, working at Buck’s Pizza. This early experience ignited a lifelong passion, leading her to manage Apizza Scholls, where she honed her skills in bread baking. 

“Pizza was my first job, and I just fell in love with it,” she recalls. Her journey is a testament to the power of pizza, even when the path is not always straightforward.

Char went from working in a pizzeria to learning more and more about pizza until an opportunity opened up for her to open her first brick-and-mortar store. Red Sauce Pizza was born.

Crafting the Perfect Pie At Red Sauce

At Red Sauce Pizza, the focus is on quality and creativity. Shar’s approach to pizza is akin to crafting ciabatta bread, with high hydration and attention to detail. Her latest obsession? Tavern-style Chicago thin crust, a nod to her childhood memories. 

“For me, a lot of pizza is nostalgia,” she shares, highlighting how personal experiences shape her culinary creations.

“Focus on being the favorite neighborhood pizzeria,” she advises. This philosophy extends to her team, where creating a supportive work environment is paramount. “I’ve been so abused in every kitchen I’ve been in,” she admits, underscoring her commitment to a positive workplace.

From the popular Peach Pit pizza, featuring seasonal peaches, ricotta, and jalapenos, to the Italian hoagies made with a sourdough starter, every item is crafted with care. As Red Sauce Pizza continues to grow, Shar remains focused on fine-tuning her craft and serving her community. With plans to expand lunch offerings and enhance the restaurant’s garden space, the future looks bright. 

“It’s just taking little parts of your restaurant and fine-tuning those,” she explains, embodying a commitment to continuous improvement.
